Chicken with Poblano Cream Sauce ♥ Healthy Food



I prepared this chicken as well as some brown rice and salad and turn out to be a delicious and elegant meal. The flavor of the poblano with the corn gives a special taste between the soft spicy and sweet. Ingredientes:
1 Chicken Breast ½ Onion 2 Garlic cloves Salt 2 Poblanos ¼ Greek Yogurt 3 Spoons of Corn

I think I added to much garlic to the sauce, instead of a whole garlic clove I would use half or a very small one.

Mexican Red Rice ♥ Authentic Mexican Food


This is one of our more traditional recipes. Most of the mexican meals are always accompanied with red rice and beans. The traditional and authentic mexican rice recipe is really easy to do and you will see a great difference in the taste. You can eat this rice with almost everything as a side dish. I love to make some "huevos montados" just put some eggs over the rice, add some salsa and you have a perfect breakfast.

Cilantro Tilapia Fillet Recipe ♥ Healthy Food

At least 3 to 4 times per week I eat tuna, salmon, or fish. Most time I end up eating tuna salad as it is the fastest and easiest way to eat fish, but when i have the time i really enjoy a good fish fillet. 1/4 cup of cilantro leaves
1 garlic clove
salt
3 spoons of onion
salt and pepper
1 tomato in slices
1/4 small onion in slices

Chicken Tinga Recipe ♥ 5 de Mayo Recipes!

Hello everyone! 5 de mayo is around the corner and is the perfect excuse for some tequila shots and Mexican food! Here is a wonderful recipe to show up with your friends. Tinga can be eaten cold or warm is really tasty and is that kind of meals that keep on getting better as the days pass. If you have any questions leave a comment and I will be happy to answer!

Ingredients:

To cook the chicken
1 Whole Chicken or 5 to 6 pieces
2 bay leaves
1 teaspoon salt
piece of onion
1 garlic clove
Let it boil for about 35 minutes. You will need 1 cup of the chicken soup.

Sauce
1 chili Chipotle
5 tomatoes
1 garlic clove
1/4 cup water
salt
1/2 onion
1 cup chicken soup

Cactus Salad ♥ Healthy Food


Ensalada de Nopalitos Recipe. Nopales are so important for our mexican culture that you can actually see a Nopal in our national flag! They grow every where and are a great source of vitamins and fiber. The best part is that they only have 15 calories per cup of cooked nopales! what make the great for diets. It is known that they are also very beneficial for diabetics Type 2 as it can help them to have lower sugar levels. I personally love nopales and want to share you one of my favorites recipes.

Ingredientes:

1 teaspoon of oregano
3 spoons of onion

1 lb or 400gr nopal cactus
2 tomatoes
1 jalapeño or serrano
1/2 onion
¼ cup white or Apple vinegar
3 Fresh Cilantro Spoons


Quesadillas with Carrot ♥ Healthy food for kids

Mexican food is actually very healthy if you cook it the right way. I love this quesadilla option because is a great way to introduce children to vegetables. Zucchini and carrot have an amount of sugar that makes them very attractive to kids. This is a very complete meal, add a glass of mil and a fruit as a dessert and there you go! You have a complete healthy meal.

Ingredients: 

Cheese 90gr or 3.17oz

2 grated carrots

CHILI BEANS ♥ Eat Healthy with Laura

Chili Beans are great for any time of the year, one of my favorite friend's mom used to make them when we had a pajama party as well as some hot dog and it was the perfect companion for a girls night.

4 cups of pinto beans
1/2 tsp cumin
1/2 tsp oregano
1 cup chili colorado sauce
240gr or 8.5oz lean ground meat
