CHARRO BEANS ♥ Eat Healthy with Laura

Charro Beans is a must do during mexican barbecues as well as the guacamole and the Nopales Salad (mexican cactus). The Frijoles Charros as well known as Cowboy Beans are a very complete meal with protein and vegetables. This is the healthy version of this traditional dish, if you want to cook the normal one just substitute the turkey products for pork or beef.



Ingredients:

2kg o 2 lb of cooked Pinto Beans
5 Tomatoes
1/2 onion
3 spoons of cilantro
10 slices or 200 gr Mexican Chorizo (low fat hame made chorizo recipe click here)
Pork Skyn Chicharrones (optional)
Salt

To make the Pinto Beans
1 pound or 400 gr of Pinto Beans
Salt to taste
2  garlic cloves
1/4 onion
1 red pepper (to cook the pinto beans)

Put the beans to cook in water and add the ingredients. For faster cooking you can leave them soaking in water one night before.

  1. Hola Laura! I was wondering on the pinto beans... what type of red pepper? Is it the dry ones you use for Chile Colorado or fresh? I am assuming fresh right so it can cook with the beans? and do you double the ingredients since above says for 1lb of beans but for your Charro recipe you used 2lbs so would i use 2 red peppers, 4 garlic cloves and 2/8 of an onion to make 2 lbs of beans?
