LOW FAT TAMALES!

You won't believe this recipe! every time I going to meet my friends they are like "Laura bring your tamales" they just loved it! and as we always are on a diet this is the perfect option for a girls night out dinner at someones home. Each tamal has abut 50 calories so you can eat them without any kind of guilt. They are easy to do and it only takes about 30 minutes to get them ready.



Ingredients:

-2 cups of ricotta cheese
-1/2 cup of grated zucchini
-1/2 cup of grated carrot
Salt to taste
Corn Leaves.
This will make about 5 to 6 tamales.

Mix the grated vegetables with the ricotta and add salt to taste. Let the corn leaves soak for about 10 minutes in hot water to  make them soft. Once the leaves are flexible put 2 spoons of the mix in the middle and fold them as a tamal  (you can see how in the video). Set the steamer with boiling water and put the tamales inside, it takes about 30 minutes to get ready. You will know they are ready when the leave separates from the ricotta. You can eat them cold or hot. I assure you, you will love them!! I will be waiting for your comments once you have made them.
